pdfconfiggui.exe does not exist anywhere in my docprint 5.0 folder or any subfolder.

pdfconfiggui.exe is included in docPrint Pro v5.0 product, the docPrint v5.0 standard version hasn’t this application. You can download and install docPrint Pro v5.0 from following URL to try again,
